Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts or pecans (optional)
  • 1 teaspoon vanilla extract
  • For the Cream Cheese Frosting:
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the vegetable oil, eggs, and vanilla. Whisk until smooth.
  4. Gradually pour the wet ingredients into the dry ingredients. Stir until just combined.
  5. Gently fold in the grated carrots, crushed pineapple, and chopped nuts (if using).
  6. Evenly distribute the batter between the prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove cakes from the oven. Let them cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. Prepare the cream cheese frosting: Beat the softened cream cheese and butter until smooth. Gradually add powdered sugar, mixing until creamy, then stir in vanilla extract.
  10. Once the cakes are completely cooled, frost the cake with the cream cheese frosting.

Notes

  • For a unique twist, add ginger or allspice to the batter.
  • Using fresh, grated carrots enhances the cake’s flavor and moisture.
  • Consider adding nuts, raisins, or pineapple for extra flavor.
  • Serve slices slightly warmed for a cozy touch.
  • Store leftover cake in an airtight container in the refrigerator for up to 5 days.
