Ingredients

Scale
  • 3 cups shredded chicken (rotisserie chicken for convenience)
  • 1 cup instant rice (pre-cooked long-grain rice can speed up cooking time)
  • 1 can cream of chicken soup (gluten-free option available)
  • 1 cup sour cream (Greek yogurt as a lighter substitute)
  • 1 bag frozen onion and bell pepper blend (fresh veggies can be used)
  • 1 can undrained diced tomatoes with green chilies (roasted tomatoes for deeper flavor)
  • 1 cup chicken broth (vegetable broth can be substituted)
  • 2 tablespoons fajita seasoning (adjust spice level as desired)
  • 2 cups shredded cheese (your favorite cheese for a gooey finish)
  • 1 cup remaining shredded cheese for topping
  • Nonstick cooking spray
  • Fresh cilantro and green onions for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly coat a 9×13-inch nonstick casserole dish with nonstick cooking spray.
  3. In a large mixing bowl, combine shredded chicken, instant rice, cream of chicken soup, sour cream, frozen onion and bell pepper blend, undrained diced tomatoes with green chilies, chicken broth, and fajita seasoning.
  4. Stir all ingredients together until well mixed and evenly combined.
  5. Spoon the mixture into the prepared nonstick casserole dish, spreading it evenly.
  6. Cover the casserole dish tightly with aluminum foil.
  7. Bake in the preheated oven for 35 minutes.
  8. Carefully remove the foil and sprinkle the remaining shredded cheese evenly over the top of the casserole.
  9. Return the dish to the oven, uncovered, and bake for an additional 10 minutes, or until the cheese is melted and golden brown.
  10. Remove the casserole from the oven and let it cool for a few minutes before garnishing with freshly chopped cilantro and green onions.
  11. Serve warm.

Notes

  • Always use a casserole dish with nonstick properties to prevent sticking and ensure easy serving.
  • Monitor baking time closely, as ovens can vary.
  • For make-ahead options, assemble the casserole up to 24 hours in advance, but add the final cheese topping just before baking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
  • To freeze, slice into portions, wrap tightly, and freeze for up to 3 months. Reheat by thawing overnight in the fridge and warming in the microwave or oven with a splash of broth.
