Cheese, Potato, and Smoked Sausage Casserole
Ingredients:
- 3 cups Idaho potatoes, peeled, boiled, and cubed (about 1 lb)
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 pound Velveeta cheese, diced
- 1/2 cup sharp cheddar cheese, shredded
- 1 lb skinless smoked sausage, sliced
- 1/8 teaspoon paprika
Instructions:
Prepare the Potatoes:
Peel and boil Idaho potatoes until tender. Once cooled, cut into cubes.
Preheat Oven:
Preheat oven to 350°F (175°C).
Make the Cheese Sauce:
In a medium saucepan, melt butter over medium heat. Stir in flour and cook, stirring constantly until smooth (forming a roux). Gradually whisk in milk, continuing to whisk until the mixture thickens and begins to bubble. Season with salt and pepper. Add diced Velveeta and shredded cheddar cheese, stirring until melted and smooth.
Combine Ingredients:
In a large mixing bowl, combine cubed potatoes and sliced smoked sausage. Pour cheese sauce over the potato and sausage mixture, gently stirring to coat evenly.
Transfer to Baking Dish:
Transfer mixture to a greased 9×13-inch baking dish, spreading evenly. Sprinkle paprika over the top for color and flavor.
Bake the Casserole:
Bake in preheated oven for 30-35 minutes, until bubbly and golden brown on top.
