Cheesy Chicken Fritters
Ingredients:
- 1.5 lb (700g) skinless, boneless chicken breast
- 2 medium eggs
- 1/3 cup (40g) almond flour
- 1 cup (110g) shredded mozzarella cheese
- 2 tbsp fresh basil, finely chopped
- 2 tbsp chives, chopped
- 2 tbsp parsley, chopped
- 1/2 tsp garlic powder
- Pinch of sea salt and fresh ground black pepper, to taste
- 1 tbsp olive oil (or more for frying)
Instructions:
- Begin by chopping the chicken breast into tiny pieces on a cutting board, then transfer them into a large mixing bowl.
- To the bowl, add almond flour, eggs, mozzarella, basil, chives, parsley, garlic powder, salt, and pepper. Mix thoroughly until well combined.
- Heat olive oil in a large non-stick pan over medium-low heat. Using an ice cream scoop or large spoon, scoop portions of the chicken mixture into the pan, gently flattening each to form a fritter. Avoid overcrowding; cook in batches (about 4 fritters per batch).
- Fry until both sides are golden brown, approximately 6-8 minutes in total. Maintain medium-low heat to ensure even cooking without burning the exterior.
- Serve hot with your favorite dipping sauce.
Note: Adjust the cooking time and heat as necessary to ensure the fritters are cooked through.
