Cheesy Egg Toast is a simple and delicious breakfast recipe that combines melted cheese and a perfectly cooked egg on crispy toast. This versatile dish can be customized with herbs or spice, making it an ideal quick morning meal or a comforting snack.

Ingredients

Scale
  • 2 slices bread
  • 1 large egg
  • ½ cup (2 oz) grated cheese (cheddar, pepper jack, or gruyere)
  • 1 teaspoon finely chopped fresh herbs (thyme or rosemary)
  • Salt and black pepper, to taste
  • Pinch of cayenne pepper (optional)

Instructions

  1. Lightly toast the bread or broil for 1 to 2 minutes on each side.
  2. Preheat the oven to 400°F. If using a toaster oven, adjust the cooking rack to the bottom and select the “BAKE” setting.
  3. Crack the egg into a small bowl and beat with a fork until the yolk and white are fully combined.
  4. Mix in the cheese and fresh herbs, if using. Add salt and pepper to taste.
  5. Spread the egg and cheese mixture over the bread, covering it all the way to the crusts. Sprinkle with cayenne if desired.
  6. Bake for about 10 to 12 minutes until the egg and cheese mixture is puffed, bubbly, and starting to brown.
  7. Preheat the air fryer to 340°F.
  8. Prepare the egg mixture and spread it over the untoasted bread slices.
  9. Carefully place the slices in the heated air fryer basket.
  10. Air fry at 340°F for 8 to 10 minutes, or until browned, toasted, and cooked through.

Notes

  • Use your favorite cheese or a combination of different cheeses.
  • Add fresh herbs like thyme or rosemary for enhanced flavor.
  • For a spicier kick, add more cayenne pepper or hot sauce.
  • Toast the bread lightly to prevent it from becoming too hard after baking.
  • For a richer taste, use thicker-cut bread like sourdough or whole grain.
  • Serve on its own or with fresh fruit, a smoothie, or coffee.
  • Leftovers can be stored in the refrigerator for up to 2 days.
  • Reheat in the oven or air fryer at 350°F for 5 to 8 minutes.
