A simple and flavorful recipe for cheesy spinach stuffed chicken breasts, perfect for a weeknight dinner or special occasion. Tender chicken is filled with a creamy mixture of spinach, cream cheese, mozzarella, and Parmesan, then seared and baked to perfection.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the chopped spinach, softened cream cheese, shredded mozzarella, grated Parmesan, minced garlic, onion powder, salt, black pepper, and red pepper flakes (if using). Mix until well combined to create the cheesy spinach filling.
  3. Place the chicken breasts on a cutting board. Using a sharp knife, create a pocket in each breast by slicing horizontally, ensuring you do not cut all the way through.
  4. Season the outside and inside of each chicken breast with salt and pepper.
  5. Generously spoon the cheesy spinach mixture into each chicken breast pocket. Use toothpicks to seal the openings if necessary to prevent the filling from leaking.
  6. In a large, oven-safe skillet, heat the olive oil over medium-high heat.
  7. Once hot, carefully add the stuffed chicken breasts to the skillet and sear each side for about 4-5 minutes until golden brown. This step enhances the flavor of your cheesy spinach stuffed chicken.
  8. Transfer the skillet to the preheated oven.
  9. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C). Ensure your cheesy chicken with spinach filling is cooked through.
  10. Remove the skillet from the oven and let the chicken rest for 5 minutes. Remove any toothpicks used.
  11. Slice or serve the cheesy spinach stuffed chicken breasts whole. Garnish with chopped fresh parsley before serving.

Notes

  • Ensure cream cheese is softened for easier mixing.
  • Drain frozen spinach well if using instead of fresh.
  • Use a meat thermometer to check for doneness.
  • Toothpicks can help secure the filling, but remember to remove them before serving.
  • Resting the chicken after baking makes it juicier.
