Chewy Ginger Molasses Cookies are a delightful treat combining warm spices like ginger and cinnamon with a rich molasses base. These cookies offer a perfect balance of chewiness and spice, ideal for cozy days or holiday gatherings.

Ingredients

Scale
  • 2 ¼ cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/3 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Additional granulated sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
  3. In a large bowl, use a mixer to cream the softened butter and sugar together until light and fluffy.
  4. Beat in the molasses, egg, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  6. Refrigerate the dough for 10-15 minutes to make it easier to handle.
  7. Scoop out the dough using a cookie scoop or spoon, rolling them into 1-inch balls. Roll each ball in granulated sugar before placing them on the prepared baking sheet.
  8. Bake in the preheated oven for 10-12 minutes. The cookies should look slightly underbaked in the center.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Use fresh spices for the best flavor.
  • Consider adding mix-ins like chocolate chips, raisins, or nuts.
  • Adjust baking time based on your oven.
  • Allow cookies to cool completely for the perfect texture.
  • Substitute egg with a flax egg or applesauce for a vegan option.
  • For gluten-free cookies, use a gluten-free flour blend.
