2 cups cooked chicken, shredded
1 cup artichoke hearts, chopped (canned or frozen)
1 cup cream cheese, softened
½ cup grated Parmesan cheese
½ cup shredded mozzarella cheese
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon fresh lemon juice
1 package of puff pastry (2 sheets), thawed
1 egg, beaten (for egg wash)
Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine the shredded chicken, chopped artichokes, cream cheese, Parmesan cheese, mozzarella cheese, garlic powder, onion powder, salt, black pepper, and lemon juice. Mix well until all ingredients are fully incorporated.
On a lightly floured surface, roll out one sheet of puff pastry. Cut into squares, approximately 3×3 inches.
Place a spoonful of the chicken mixture in the center of each pastry square.
Fold the edges of the pastry over the filling to create a triangle or pocket shape. Press the edges to seal. You can use a fork to crimp the edges for a decorative touch.
Brush the tops of the pastry bites with the beaten egg to achieve a golden color when baked.
Place the filled pastry bites on the prepared baking sheet and bake in the preheated oven for 30-40 minutes, or until golden brown and puffed.
Remove from the oven and let cool for 5-10 minutes before serving.
