  • 4 boneless, skinless chicken breasts
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • ½ cup fresh spinach, chopped
  • ½ cup sun-dried tomatoes, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a bowl, combine the cream cheese, mozzarella cheese, spinach, sun-dried tomatoes, garlic powder, salt, and pepper. Mix until well combined.
  3. Take each chicken breast and slice it in half horizontally to create thinner pieces.
  4. Place a generous spoonful of the cheese mixture onto each chicken piece. Spread it evenly, leaving a bit of space around the edges.
  5. Carefully roll up each chicken piece, starting from one end and tucking in the sides as you go. Secure with toothpicks if necessary.
  6. Arrange the rolled chicken in the prepared baking dish, seam side down.
  7. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.
  8. Allow the roll ups to cool for a few minutes before removing toothpicks and slicing them into bite-sized pieces.
