Chicken Thighs and Potatoes Recipe

I cook almost every day, and one of my favorite dishes is chicken thighs with potatoes. Here’s the recipe for this delicious meal:

Ingredients:

  • 5 chicken thighs
  • 5 potatoes
  • 2 carrots
  • 3 cloves garlic
  • 1 onion
  • 3 1/2 tablespoons butter
  • 1 bundle parsley
  • Salt, to taste
  • Pepper, to taste
  • 1/3 cup honey
  • 1/3 cup sweet chili sauce
  • 1/4 cup soy sauce
  • 1 tablespoon mustard

Method:

  1. Preheat your oven to 375°F (190°C).
  2. Clean and chop the potatoes, carrots, and onions into bite-sized pieces. Mince the garlic.
  3. In a large bowl, mix the honey, sweet chili sauce, soy sauce, and mustard.
  4. Add the chicken thighs to the bowl, ensuring they are well-coated with the marinade.
  5. Heat a large skillet over medium heat and melt the butter. Sauté the garlic and onions until they are fragrant and golden brown.
  6. Transfer the chicken thighs and the marinade to the skillet, searing them on both sides until they are nicely browned.
  7. Arrange the potatoes and carrots in a baking dish. Place the chicken thighs on top of the vegetables and pour the remaining marinade over the dish.
  8. Season with salt and pepper to taste.
  9. Cover the baking dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15 minutes to let the chicken skin crisp up.
  10. Garnish with chopped parsley before serving.
