  • 2 cups wild rice, rinsed and drained
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, combine the wild rice and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for about 40-45 minutes, or until rice is tender.
  3. While the rice cooks, dice the celery and carrots, and measure out the frozen peas.
  4. In a large mixing bowl, combine the cooked chicken, cooked wild rice, cream of mushroom soup, sour cream, celery, carrots, and peas. Add garlic powder, onion powder, thyme, salt, and pepper. Stir until everything is well combined.
  5. Grease a 9×13-inch casserole dish. Pour the mixture into the dish and spread evenly.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  7. Remove the foil, sprinkle cheddar cheese on top if using, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for a few minutes before serving.
