  • 1 tablespoon coconut oil (or any cooking oil)
  • 1 medium onion, diced
  • 3 cloves garlic, minced

  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric powder
  • ½ teaspoon chili powder (adjust to taste)
  • Salt to taste
  • Fresh cilantro, for garnish
  • Juice of 1 lime
  • Cooked rice or naan bread, for serving

Instructions

  1. In a large pot, heat the coconut oil over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  4. Sprinkle in the curry powder, ground cumin, ground coriander, turmeric, and chili powder. Cook for about 30 seconds to bloom the spices.
  5. Pour in the diced tomatoes and coconut milk, stirring to combine.
  6. Add the drained chickpeas and bring the mixture to a simmer.
  7. Allow the curry to simmer for about 20 minutes, stirring occasionally.
  8. Taste and adjust the seasoning with salt, and add lime juice for brightness.
