2 cups rotini pasta
2 cups cooked chicken breast, shredded
1 cup shredded carrots
1 cup bell peppers, diced (red and yellow for color)
1 cup snap peas, trimmed and halved
¼ cup green onions, sliced
½ cup cilantro, chopped
½ cup peanuts, chopped (optional)
½ cup soy sauce
¼ cup sesame oil
2 tablespoons rice vinegar
2 tablespoons honey
1 tablespoon minced garlic
1 teaspoon ginger, grated
Salt and pepper to taste
Instructions
Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
If not using pre-cooked chicken, poach or grill chicken breasts until fully cooked. Allow to cool, then shred into bite-sized pieces.
Chop the carrots, bell peppers, snap peas, green onions, and cilantro. Set aside.
In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, minced garlic, and grated ginger. Adjust seasoning with salt and pepper to taste.
In a large mixing bowl, combine the cooked pasta, shredded chicken, and chopped vegetables. Add the dressing and toss everything together until well coated.
Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
Before serving, give the salad another toss and sprinkle with chopped peanuts, if using. Garnish with additional cilantro and green onions.
Notes
This salad is best served chilled.
You can substitute chicken with tofu for a vegetarian option.
