- 1 ½ cups warm water (about 110°F or 43°C)
- 2 teaspoons instant yeast
- 2 teaspoons salt
- 3 tablespoons olive oil (plus more for greasing)
- 1 chipotle pepper in adobo sauce, finely chopped
- 1 medium onion, thinly sliced
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- Fresh parsley for garnish (optional)
- In a large mixing bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
- Add flour, salt, 2 tablespoons of olive oil, and chopped chipotle pepper to the yeast mixture. Stir until the dough starts to come together.
- Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover it, and let it rise in a warm area for about 1 hour or until it doubles in size.
- While the dough is rising, heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional 1-2 minutes, then remove from heat.
- Once the dough has risen, punch it down to release air. Transfer it to a greased baking sheet or a rectangular pan, stretching it to fit.
- Cover the dough again and let it rise for another 30 minutes.
- Preheat your oven to 425°F (220°C).
