  • 4 cups all-purpose flour
  • 1 ½ cups warm water (about 110°F or 43°C)
  • 2 teaspoons instant yeast
  • 2 teaspoons salt
  • 3 tablespoons olive oil (plus more for greasing)
  • 1 chipotle pepper in adobo sauce, finely chopped
  • 1 medium onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large mixing bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
  2. Add flour, salt, 2 tablespoons of olive oil, and chopped chipotle pepper to the yeast mixture. Stir until the dough starts to come together.
  3. Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover it, and let it rise in a warm area for about 1 hour or until it doubles in size.
  5. While the dough is rising, heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional 1-2 minutes, then remove from heat.
  6. Once the dough has risen, punch it down to release air. Transfer it to a greased baking sheet or a rectangular pan, stretching it to fit.
  7. Cover the dough again and let it rise for another 30 minutes.
  8. Preheat your oven to 425°F (220°C).
  9. After the second rise, use your fingers to create dimples all over the surface of the dough. Spread the sautéed garlic and onion mixture evenly over the top. Sprinkle dried oregano.
  10. Place the focaccia in the preheated oven and bake for 25-30 minutes or until golden brown.
  11. Remove the focaccia from the oven and let it cool in the pan for about 10-15 minutes before transferring to a wire rack.
  12. Once cooled, slice the focaccia into squares or rectangles for serving.
