Chocolate Biscuit Pudding
Ingredients:
For the Chocolate Biscuit Layer:
- 400g biscuits
- 400ml milk (2 cups)
- 2 tablespoons sugar (40g)
- 2 tablespoons corn starch (30g)
- 2 tablespoons unsweetened cocoa (20g)
- 100g dark chocolate
For the Cream Layer:
- 250ml sweetened cream
- 200g dark chocolate
- White chocolate flakes for garnish (to taste)
Directions:
For the Chocolate Biscuit Layer:
- Break the biscuits into small pieces and place them in a large bowl.
- In a saucepan, combine the milk, sugar, corn starch, and unsweetened cocoa. Stir well until smooth.
- Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring constantly.
- Once the mixture thickens, remove it from the heat and add the dark chocolate. Stir until the chocolate is completely melted and the mixture is smooth.
- Pour the chocolate mixture over the broken biscuits in the bowl. Mix until the biscuits are well coated.
- Transfer the chocolate biscuit mixture to a serving dish or individual dessert cups. Smooth the top with a spatula. Let it cool and set while preparing the cream layer.
For the Cream Layer:
- In a mixing bowl, whip the sweetened cream until stiff peaks form.
- In a heatproof bowl, melt the dark chocolate in the microwave or over a double boiler, stirring until smooth.
- Once the melted chocolate has cooled slightly, fold it into the whipped cream until well combined.
- Spread the chocolate cream mixture over the cooled chocolate biscuit layer in the serving dish or cups. Smooth the top with a spatula.
- Refrigerate the chocolate biscuit pudding for at least 2 hours, or until set.
For Serving:
- Before serving, garnish the chocolate biscuit pudding with white chocolate flakes according to your taste.
