Chopped Cheese Loaded Burritos

Ingredients:

For the Burritos:

  • 4 large flour tortillas
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 tomatoes, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/4 cup sour cream
  • 1/4 cup salsa

Additional Toppings (Optional):

  • Jalapeños, sliced
  • Black olives, sliced
  • Fresh cilantro, chopped

Directions:

Cook the Beef:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the ground beef, breaking it up with a spatula. Cook until browned.
  3. Stir in the onions, green bell pepper, garlic powder, paprika, salt, and black pepper. Cook until the vegetables are softened, about 5-7 minutes.
  4. Remove from heat and let cool slightly.

Assemble the Burritos:

  1. Warm the flour tortillas in a dry skillet or microwave to make them pliable.
  2. Down the center of each tortilla, layer the cooked beef mixture, diced tomatoes, shredded cheese, and shredded lettuce.
  3. Add a dollop of sour cream and salsa over the toppings.
  4. If desired, add jalapeños, black olives, and cilantro for extra flavor.

Roll the Burritos:

  1. Fold the bottom of the tortilla up over the filling, then fold in the sides and roll tightly to close.

Serve:

  1. Serve the burritos immediately, with additional salsa and sour cream on the side if desired.
