Chopped Chicken Salad: An Incredible Ultimate Recipe

Ingredients

Scale
  • 2 cups cooked, chopped chicken breast
  • 4 cups mixed greens (e.g., romaine, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup bell pepper, diced (any color)
  • ½ cup shredded carrots
  • ¼ cup sliced almonds or walnuts (optional)
  • ½ cup feta cheese or shredded cheese of choice (optional)
  • ½ cup mayonnaise or Greek yogurt (for dressing)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Create Chopped Chicken Salad by following these steps:
  2. If you don’t have pre-cooked chicken, season chicken breasts with salt and pepper. Grill or bake at 375°F (190°C) for 25-30 minutes until cooked through. Let cool and chop.
  3. Rinse and chop the mixed greens, cherry tomatoes, cucumber, red onion, bell pepper, and carrots. Place them in a large salad bowl.
  4. Add the cooked and chopped chicken to the bowl with the vegetables.
  5. In a small bowl, whisk together mayonnaise (or Greek yogurt), apple cider vinegar, Dijon mustard, salt, and pepper to taste.
  6. Pour the dressing over the salad mixture and toss gently until everything is well-coated.
  7. Sprinkle sliced almonds or walnuts and feta cheese over the top if using.
  8. Enjoy your salad fresh, or refrigerate for up to 2 days for later enjoyment.
