Christmas Marshmallows: An Incredible Ultimate Recipe for the Holidays

  • 2 cups granulated sugar
  • ½ cup light corn syrup
  • ½ cup water
  • 2 tablespoons unflavored gelatin
  • 1 cup powdered sugar (for dusting)
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract (optional)
  • Food coloring (red and green for festive colors)
  • Sprinkles (for decoration)

Instructions

  1. Lightly grease a 9×13-inch baking dish with non-stick spray and dust with powdered sugar. Set aside.
  2. In a small bowl, combine the gelatin with ½ cup of cold water. Let it sit for about 10 minutes to bloom.
  3. In a medium saucepan, combine granulated sugar, corn syrup, and ½ cup of water. Cook over medium heat, stirring until the sugar dissolves.
  4. Increase the heat and bring the mixture to a boil without stirring. Use a candy thermometer to check the temperature.
  5. Allow the mixture to boil until it reaches 240°F (soft ball stage). Remove from heat.
  6. Add the bloomed gelatin to the hot sugar syrup. Stir until completely dissolved.
  7. In a stand mixer, beat the mixture on high speed for about 10-15 minutes until it becomes thick and fluffy. Add vanilla extract and peppermint extract, if using.
  8. If you want colored marshmallows, divide the mixture into separate bowls and add a few drops of food coloring. Stir gently until blended.
  9. Pour the marshmallow mixture into the prepared baking dish. Use a spatula to spread it evenly.
  10. Allow the marshmallows to set at room temperature for at least 1 hour or until firm.
  11. Once set, dust a clean surface with powdered sugar. Turn the marshmallow slab out onto the surface and cut into squares. Dust the cut sides with more powdered sugar to prevent sticking.
