Mouthwatering Christmas Salmon with Pomegranate Glaze

  • 1 lb Salmon
  • 1 tsp Kosher Salt
  • 1 tsp Black Pepper
  • 1 cup Pomegranate Juice
  • 1/2 cup Brown Sugar
  • 1/4 cup Fresh Squeezed Orange Juice
  • 1 tbsp Orange Zest
  • 1/4 cup Pomegranate Seeds
  • 2 slices Orange Slices
  • 2 tbsp Fresh Parsley
  • 2 stalks Green Onions

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Place the salmon, skin-side down, on the lined baking sheet. Season with kosher salt and black pepper.
  3. In a saucepan, combine pomegranate juice, brown sugar, fresh orange juice, and orange zest. Heat until boiling.
  4. Reduce heat and simmer for 20–25 minutes until the mixture thickens to a syrup-like consistency.
  5. Brush the thickened glaze generously over the salmon, reserving some for serving.
  6. Bake for 30–38 minutes or until the internal temperature reaches 145°F (63°C).
  7. Transfer to a serving platter and garnish with pomegranate seeds, orange slices, parsley, and green onions.
