Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • ½ cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • ¼ cup buttermilk
  • 1 ½ cups diced ripe pears (about 23 pears)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing it or using muffin liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and ginger.
  3. In a separate bowl, mix the granulated sugar and brown sugar until well combined.
  4. Add the egg, vegetable oil (or melted butter), vanilla extract, and buttermilk to the sugar mixture. Whisk together until smooth.
  5. Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  6. Fold in the diced pears until evenly distributed.
  7. Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the muffins from the oven and let them cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For best flavor and moisture, use ripe pears.
  • Do not overmix the batter to ensure tender muffins.
  • Adjust cinnamon and ginger levels to your preference.
  • Consider adding chopped walnuts or pecans for extra crunch.
  • Substitute all-purpose flour with a gluten-free blend for a gluten-free option.
  • Experiment with other spices like nutmeg or cardamom.
  • A simple icing can be drizzled over cooled muffins for an extra treat.
