2 tbsp Flour (Thickens filling.)

1/2 cup Light-brown Sugar or Granulated Sugar

Instructions
Roll out your dough on a lightly floured surface and fit into a 9-inch pie dish. Preheat the oven to 375°F (190°C).
Combine peeled and sliced apples, flour, sugar, cinnamon, and lemon juice in a large bowl. Toss to coat, then pour into dough.
Roll out second portion of dough into a 12-inch rectangle. Brush with melted butter, then sprinkle with sugar and cinnamon. Roll tightly into a log and refrigerate for 15 minutes.
Slice the chilled dough log into 1-inch rounds and arrange on top of the apple filling.
Chill the assembled pie for 20 minutes. Whisk the egg and brush over the topping, sprinkle with turbinado sugar if desired.
Bake the pie for 60 to 80 minutes until the topping is golden brown and the filling bubbles. Cover with foil if top browns too quickly.
Allow the pie to cool on a wire rack for at least 30 minutes. Serve warm, optionally with glaze or ice cream.
