Traditional Irish Beef Stew

Ingredients:

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 large carrots, peeled and sliced
  • 3 potatoes, peeled and cubed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 cups sliced mushrooms
  • Salt and pepper to taste
  • Chopped fresh parsley, for garnish

Directions:

  1. Toss the beef cubes with flour until evenly coated.
  2. In a large pot, heat olive oil over medium-high heat. Brown the beef in batches on all sides. Remove and set aside.
  3. In the same pot, add onion and garlic. Sauté until onion is translucent.
  4. Return the beef to the pot. Add carrots, potatoes, thyme, rosemary, beef broth, and tomato paste. Stir well.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 hours, or until beef is tender.
  6. Add mushrooms and cook for an additional 30 minutes.
  7. Season with salt and pepper to taste. Garnish with chopped parsley before serving.
