- 6 slices of bacon, chopped
- 1 medium onion, diced
- 2 celery stalks, diced
- 2 cups chicken broth
- 2 large eggs, beaten
- 1 tablespoon dried sage
- 1 tablespoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove bacon and drain on paper towels.
- In the same skillet, add the diced onion and celery to the bacon drippings. Sauté until softened, about 5-7 minutes.
- Crumble the cornbread into a large mixing bowl.
- Add the sautéed vegetables and cooked bacon to the bowl with the cornbread.
- Pour in the chicken broth and beaten eggs. Mix until well combined.
- Stir in dried sage, thyme, salt, and pepper to taste.
- Pour the stuffing mixture into a greased baking dish, spreading it evenly.
- Bake in the preheated oven for 30-45 minutes, or until golden brown on top.
- Allow to cool for about 10-15 minutes before serving. Garnish with fresh parsley.
