Cornbread Stuffing with Bacon is a savory dish perfect for holidays or family gatherings.

  • 1 batch of cornbread (homemade or store-bought)
  • 6 slices of bacon, chopped
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 2 cups chicken broth
  • 2 large eggs, beaten
  • 1 tablespoon dried sage
  • 1 tablespoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove bacon and drain on paper towels.
  3. In the same skillet, add the diced onion and celery to the bacon drippings. Sauté until softened, about 5-7 minutes.
  4. Crumble the cornbread into a large mixing bowl.
  5. Add the sautéed vegetables and cooked bacon to the bowl with the cornbread.
  6. Pour in the chicken broth and beaten eggs. Mix until well combined.
  7. Stir in dried sage, thyme, salt, and pepper to taste.
  8. Pour the stuffing mixture into a greased baking dish, spreading it evenly.
  9. Bake in the preheated oven for 30-45 minutes, or until golden brown on top.
  10. Allow to cool for about 10-15 minutes before serving. Garnish with fresh parsley.
