  • 2 cups cottage cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese
  • 1 jar (24 oz) marinara sauce
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional: chopped spinach, mushrooms, or ground beef

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a mixing bowl, combine cottage cheese, egg, Italian seasoning, salt, and pepper. Stir until well mixed.
  4. Spread a thin layer of marinara sauce at the bottom of a 9×13 inch baking dish.
  5. Place three lasagna noodles on top of the sauce.
  6. Spread half of the cottage cheese mixture over the noodles.
  7. Sprinkle with a third of the mozzarella cheese.
  8. Add more marinara sauce over the cheese.
  9. Repeat the layering process: three noodles, the remaining cottage cheese mixture, another third of the mozzarella cheese, and more marinara sauce.
  10. Finish with the last three lasagna noodles. Spread the remaining marinara sauce and top with the remaining mozzarella and Parmesan cheese.
  11. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  12. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
  13. Allow the lasagna to cool for about 10-15 minutes before slicing and serving.
