Instructions

  1. Prepare the Wild Rice: In a pot, bring 4 cups of vegetable broth to a boil. Add the rinsed wild rice, reduce heat to low, and simmer, covered, for about 45 minutes, or until tender.
  2. Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables soften.
  3. Add Mushrooms and Herbs: Stir in the sliced mushrooms, dried thyme, and dried rosemary. Cook for another 5 minutes, allowing the mushrooms to release their juices and become tender.
  4. Combine with Broth: Pour in the remaining 2 cups of vegetable broth along with the bay leaf. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.
  5. Incorporate Wild Rice: Once the wild rice is cooked, drain any excess liquid and add it to the soup. Stir well to combine.
  6. Finish with Cream: Pour in the heavy cream or coconut milk, stirring to combine. Simmer for an additional 5-10 minutes. Season with salt and pepper to taste.
