A hearty and comforting beef stew made in a slow cooker, perfect for cold weather or any occasion. This recipe features tender beef chuck, seasonal vegetables, and a rich, savory broth infused with herbs.

  • 2 lbs beef chuck, cut into bite-sized chunks
  • 1 tbsp olive oil (for searing)
  • 2 medium carrots, peeled and chopped
  • 2 medium potatoes, peeled and cubed
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Season beef chuck with salt and pepper.
  2. Optional: Sear beef in a hot skillet with olive oil until browned on all sides.
  3. Place diced onions in the bottom of the slow cooker.
  4. Add the beef (seared or raw) on top of the onions.
  5. Arrange chopped carrots and cubed potatoes over the beef.
  6. Sprinkle dried thyme and rosemary over the ingredients.
  7. Tuck in the bay leaves.
  8. In a separate bowl, whisk together beef broth, tomato paste, and Worcestershire sauce.
  9. Pour the broth mixture over the ingredients in the slow cooker.
  10. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  11. Taste and adjust seasoning before serving.
  12. Optional: Thicken the stew by removing the lid for the last 30 minutes of cooking.

  • For a richer flavor, searing the beef before adding it to the slow cooker is recommended.
  • Ensure vegetables are cut into uniform pieces for even cooking.
