  • 1 lb ground beef (or turkey)
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes, with juice
  • 1 can (6 oz) tomato paste
  • 1 cup beef broth (or vegetable broth)
  • 3 tbsp chili powder
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Optional toppings: shredded cheese, sour cream, chopped green onions, jalapeños

Instructions

  • Prepare the Base: In a skillet over medium heat, add the olive oil. Once hot, sauté the diced onion and garlic, cooking for about 3-4 minutes until translucent.
  • Cook the Meat: Add the ground beef (or turkey) to the skillet and cook until browned, breaking it apart with a spoon as it cooks, approximately 5-7 minutes. Drain excess fat if necessary.
  • Transfer to Slow Cooker: Transfer the onion, garlic, and meat mixture into the slow cooker.
  • Add Vegetables and Beans: Add the diced green and red bell peppers, kidney beans, black beans, diced tomatoes, and tomato paste to the slow cooker.
  • Incorporate Broth & Seasonings: Pour in the beef (or vegetable) broth, and sprinkle in the chili powder, cumin, smoked paprika, oregano, and season with salt and pepper. Stir well to combine all ingredients.
  • Slow Cook: Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours, letting the flavors meld together beautifully.
  • Serve: Once cooked, give the chili a good stir. Taste and adjust seasoning as needed. Serve hot, topped with your choice of shredded cheese, sour cream, chopped green onions, or jalapeños.

Notes

  • This recipe can be adapted for vegetarians by omitting the meat and using vegetable broth.
  • Adjust the chili powder and other spices to your preference for heat level.
  • For a thicker chili, you can mash some of the beans against the side of the slow cooker before serving.
