Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the diced onion and red bell pepper, and sauté until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the ground beef to the pot. Break it apart with a wooden spoon and cook until browned, about 7-10 minutes. Drain any excess fat.
  5. Stir in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook for 2-3 minutes, allowing the spices to toast and enhance their flavors.
  6. Add the pumpkin puree, kidney beans, diced tomatoes with their juices, and beef broth to the pot. Stir everything together until well combined.
  7. Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for 30-35 minutes, stirring occasionally to prevent sticking. If the chili becomes too thick, add a bit more beef broth or water to reach your desired consistency.
