- 1 loaf of day-old bread, cubed (about 8 cups)
- 1 cup cranberries (fresh or dried)
- 1 apple, peeled and diced
- 1 cup walnuts, chopped
- 1 medium onion, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1/2 cup vegetable broth
- 1/2 cup apple juice
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Fresh parsley, for garnish (optional)
- Preheat your oven to 350°F (175°C).
- In a large bowl, add the cubed bread. Set aside.
- In a skillet over medium heat, add olive oil. Sauté the onion, celery, and garlic until translucent, about 5 minutes.
- In the bowl with the bread, add the sautéed vegetables, cranberries, diced apple, and chopped walnuts.
- In a separate bowl, combine vegetable broth, apple juice, thyme, sage, salt, and pepper. Mix well.
- Pour the liquid mixture over the bread mixture. Gently stir until the bread is well-coated and the liquid is absorbed.
- Spoon the stuffing into a greased 9×13-inch baking dish.
