Cranberry Apple Walnut Stuffing is a delightful and flavorful side dish perfect for your holiday meals.

  • 1 loaf of day-old bread, cubed (about 8 cups)
  • 1 cup cranberries (fresh or dried)
  • 1 apple, peeled and diced
  • 1 cup walnuts, chopped
  • 1 medium onion, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1/2 cup vegetable broth
  • 1/2 cup apple juice
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, add the cubed bread. Set aside.
  3. In a skillet over medium heat, add olive oil. Sauté the onion, celery, and garlic until translucent, about 5 minutes.
  4. In the bowl with the bread, add the sautéed vegetables, cranberries, diced apple, and chopped walnuts.
  5. In a separate bowl, combine vegetable broth, apple juice, thyme, sage, salt, and pepper. Mix well.
  6. Pour the liquid mixture over the bread mixture. Gently stir until the bread is well-coated and the liquid is absorbed.
  7. Spoon the stuffing into a greased 9×13-inch baking dish.
  8. Cover the dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes to allow the top to crisp up.
  9. Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired.
  10. Serve warm alongside your favorite main dishes.
