1 cup rolled oats
1/2 cup packed brown sugar
1/2 cup granulated sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, melted
1 cup dried cranberries
1/2 cup white chocolate chips
1/4 cup cream cheese, softened
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 tablespoon milk (as needed for frosting)
Instructions
Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
In a large bowl, combine the flour, rolled oats, brown sugar, granulated sugar, baking soda, and salt.
Pour in the melted butter and mix until the dry ingredients are well combined and crumbly.
Fold in the dried cranberries and white chocolate chips, distributing them evenly throughout the mixture.
Transfer the mixture to the prepared baking dish and press it down evenly to form a solid base.
Place the dish in the preheated oven and bake for 25-30 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
Allow the bars to cool in the baking dish for about 30 minutes. Once cool, lift them out using the parchment paper, if used, and place them on a wire rack.
In a small bowl, blend the softened cream cheese, powdered sugar, vanilla extract, and milk until smooth and creamy.
Once the bars have completely cooled, spread the cream cheese frosting evenly over the top.
