  • 8 ounces brie cheese (cut into small pieces)
  • 1/2 cup cranberry sauce (store-bought or homemade)
  • 1 egg (beaten, for egg wash)
  • Fresh rosemary or thyme (optional, for garnish)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface. Cut it into squares (approximately 3×3 inches).
  3. Place a square of pastry on the prepared baking sheet. Add a small piece of brie cheese and a spoonful of cranberry sauce in the center of each square.
  4. Fold the corners of the pastry over the filling to create a pocket. Pinch the edges to seal them securely.
  5. Use a pastry brush to apply the beaten egg on the tops of the bites for a golden finish.
  6. Place the baking sheet in the preheated oven and bake for 15-20 minutes or until the pastry is golden and puffed.
  7. Once baked, remove the bites from the oven and let them cool for a few minutes.
