Ingredients:
- 2 lbs red potatoes, boiled
- ¼ cup butter
- 3 Tbsp. flour
- 1 ½ tsp. salt
- ¼ tsp. pepper
- 1 ½ cups milk
- 1 cup evaporated milk
- 10 oz. frozen peas
- ½ cup onion, diced
- 4 slices bacon, cooked and crumbled
Instructions:
- Preheat your oven to 325°F (163°C).
- Halve the boiled red potatoes and arrange them on a greased baking sheet.
- Evenly distribute the frozen peas over the potatoes.
- In a saucepan, melt the butter over medium heat. Stir in the flour, salt, and pepper to create a roux.
- Gradually add the milk and evaporated milk, stirring continuously until the sauce reaches the desired consistency.
- Pour the sauce over the potatoes and peas, ensuring they are well-coated.
- Sprinkle the diced onion and crumbled bacon on top of the vegetables.
- Bake in the preheated oven for 20 to 25 minutes, or until the dish is bubbly and the top is lightly browned.
