2 pounds russet or Yukon gold potatoes
½ cup unsalted butter, softened
1 cup heavy cream
½ cup sour cream
Salt, to taste
Freshly ground black pepper, to taste
Optional: 1 cup shredded cheddar cheese or garlic for added flavor
Instructions
Peel the potatoes and cut them into evenly sized chunks.
Place the potato chunks in a large pot and cover them with cold water. Bring to a boil over high heat and then reduce to a simmer. Cook for about 15-20 minutes or until tender.
Once cooked, drain the potatoes thoroughly. Return them to the pot and let them steam for a few minutes.
Use a potato masher or ricer to mash the potatoes until smooth.
