  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 teaspoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 8 ounces egg noodles or desired pasta
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the egg noodles according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, seasoning with salt and pepper. Sauté until golden brown and cooked through, about 5-7 minutes.
  3. Add the chopped onions and minced garlic to the same skillet. Cook until the onions are translucent, about 3-4 minutes.
  4. Stir in the sliced mushrooms and sprinkle with paprika. Cook until the mushrooms are tender and have released their moisture, around 5 minutes.
  5. Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet. Allow the mixture to simmer for about 2 minutes.
  6. Reduce heat to low, then stir in the sour cream, Dijon mustard, and Worcestershire sauce. Mix well until creamy.
  7. Add the cooked egg noodles to the skillet, gently folding them into the sauce until evenly coated.
  8. Taste and adjust the seasoning with salt and pepper as desired. Allow everything to warm together for 2-3 minutes.
  9. Remove from heat and garnish with freshly chopped parsley for a pop of color.
