A delightful and easy skillet dish featuring plump shrimp coated in a rich, creamy garlic butter sauce with a hint of Italian seasoning, cherry tomatoes, and spinach.

  • 1 lb large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)
  • Cooked pasta or rice (for serving)

Instructions

  1. Season the peeled and deveined shrimp with paprika, salt, and pepper. Set aside.
  2. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the seasoned shrimp to the skillet and cook for about 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the remaining 2 tablespoons of butter, followed by the chicken broth. Bring to a simmer and then whisk in the heavy cream and Italian seasoning.
  5. Cook for about 3-4 minutes, allowing the sauce to thicken slightly.
  6. Stir in the halved cherry tomatoes and fresh spinach. Allow them to cook in the sauce until the spinach wilts and the tomatoes start to soften, about 2-3 minutes.
  7. Return the cooked shrimp to the skillet and mix well. Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with additional salt and pepper if needed.
  8. Serve the creamy garlic butter shrimp over cooked pasta or rice. Garnish with fresh parsley before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes with the garlic.
  • If the sauce is too thick, you can add a splash more chicken broth or heavy cream.
