2 cups elbow macaroni
1 cup mayonnaise
1/2 cup sour cream
1 tablespoon apple cider vinegar
1 tablespoon sugar
1 cup diced ham
1 cup diced pineapple (fresh or canned)
1/2 cup diced bell pepper (red or green)
1/2 cup grated carrots
1/4 cup chopped green onions
Salt and pepper to taste
Instructions
Boil a pot of salted water. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and rinse under cold water to cool.
In a large bowl, combine mayonnaise, sour cream, apple cider vinegar, and sugar. Mix until smooth and creamy.
Stir in the diced ham, pineapple, bell pepper, grated carrots, and green onions into the dressing. Mix well to combine.
Add the cooled macaroni to the bowl with the dressing mixture. Stir gently until the macaroni is fully coated.
Add salt and pepper to taste. Adjust seasoning as needed.
