Creamy Ranch Chicken Mac and Cheese

Ingredients:

  • 8 ounces of macaroni pasta
  • 1 tablespoon of olive oil
  • 1 pound of boneless, skinless chicken breasts, cubed
  • Salt and pepper to taste
  • 1 packet (1 ounce) of ranch dressing mix
  • 2 tablespoons of butter
  • 2 tablespoons of all-purpose flour
  • 2 cups of milk
  • 2 cups of shredded sharp cheddar cheese
  • 1/2 cup of grated Parmesan cheese
  • 1/2 cup of sour cream
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • 1/2 cup of cooked, crumbled bacon (optional)
  • Chopped parsley for garnish

Directions:

  1. Cook the macaroni according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the chicken with salt and pepper, then add it to the skillet. Cook until no longer pink, then stir in the ranch dressing mix. Set aside.
  3. In the same skillet, melt butter over medium heat. Whisk in flour until smooth, about 2 minutes. Gradually whisk in milk until thickened.

  5. Combine the cooked macaroni, ranch chicken, and cheese sauce in a large bowl. Mix until well coated. Garnish with bacon and parsley if desired.
