  • 12 ounces pasta (such as fettuccine or penne)
  • 1 pound chicken breast, boneless and skinless
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and set aside.
  2. Season chicken breasts with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium heat. Cook chicken for 6-8 minutes per side until cooked through. Remove chicken and let rest.
  4. Sauté minced garlic in the same skillet for about 1 minute until fragrant.
  5. Reduce heat to low. Add ricotta cheese and Parmesan cheese to the skillet. Stir until melted and combined.
  6. Slice the cooked chicken into bite-sized pieces.
  7. Add the cooked pasta and sliced chicken to the cheese sauce. Toss until evenly coated.
  8. Taste and adjust seasoning with additional salt and pepper if needed.
  9. Serve hot, garnished with fresh basil if desired.
