  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil, for garnish (optional)

Instructions

  1. Boil a large pot of salted water. Add the gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant.
  3. Stir in the chopped sun-dried tomatoes and cook for 2-3 minutes, allowing the flavors to meld.
  4. Add fresh spinach to the skillet and cook until wilted, about 2 minutes.
  5. Pour in the heavy cream, stirring to combine. Bring to a gentle simmer.
  6. Stir in the grated Parmesan cheese, allowing it to melt and thicken the sauce. Season with salt and pepper to taste.
  7. Add the cooked gnocchi to the skillet, tossing to coat them in the creamy sauce.
  8. Remove from heat and serve immediately, garnished with fresh basil if desired.

  • For a lighter version, use half-and-half instead of heavy cream.
