  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • Fresh cilantro, for garnish
  • Sliced jalapeños, for garnish (optional)
  • Lime wedges, for serving

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add chicken breasts and cook until browned on both sides. Remove chicken and set aside.
  2. In the same pot, sauté diced onion until translucent, about 5 minutes. Add minced garlic and sauté for 1 minute more until fragrant.
  3. Stir in diced green chilies and chicken broth. Bring to a boil.
  4. Add drained white beans and corn. Stir to combine.
  5. Sprinkle in cumin, chili powder, paprika, salt, and pepper.
  6. Shred the cooked chicken and return it to the pot. Reduce heat to low, cover, and simmer for 30 minutes.
  7. Stir in heavy cream and shredded Monterey Jack cheese until melted and creamy.
  8. Taste and adjust seasoning as needed.
  9. Garnish with fresh cilantro, sliced jalapeños, and lime wedges if desired.
  10. Serve warm with tortilla chips or crusty bread.
