Ingredients:
- 4 large green tomatoes
- 2 eggs
- 1/2 cup milk
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1/2 cup bread crumbs
- 2 teaspoons coarse kosher salt
- 1/4 teaspoon ground black pepper
- 1 quart vegetable oil for frying
Instructions:
- Begin by slicing the tomatoes into 1/2 inch thick slices, discarding the ends.
- In a medium-size bowl, whisk together the eggs and milk.
- Place the flour on a plate, and on another plate, mix the cornmeal, bread crumbs, salt, and pepper.
- Dip each tomato slice into the flour to coat, then into the egg and milk mixture, and finally dredge it in the breadcrumb mixture to completely coat.
- In a large skillet, heat vegetable oil over medium heat (enough to reach 1/2 inch depth in the pan).
- Carefully place the coated tomato slices into the hot oil in batches of 4 or 5, ensuring they don’t touch each other.
- Fry the tomatoes until golden brown on one side, then flip and fry until golden brown on the other side.
- Once fried, remove the tomatoes from the skillet and drain them on paper towels to remove excess oil.
