Ingredients:

  • 4 large green tomatoes
  • 2 eggs
  • 1/2 cup milk
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/2 cup bread crumbs
  • 2 teaspoons coarse kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 quart vegetable oil for frying

Instructions:

  1. Begin by slicing the tomatoes into 1/2 inch thick slices, discarding the ends.
  2. In a medium-size bowl, whisk together the eggs and milk.
  3. Place the flour on a plate, and on another plate, mix the cornmeal, bread crumbs, salt, and pepper.
  4. Dip each tomato slice into the flour to coat, then into the egg and milk mixture, and finally dredge it in the breadcrumb mixture to completely coat.
  5. In a large skillet, heat vegetable oil over medium heat (enough to reach 1/2 inch depth in the pan).
  6. Carefully place the coated tomato slices into the hot oil in batches of 4 or 5, ensuring they don’t touch each other.
  7. Fry the tomatoes until golden brown on one side, then flip and fry until golden brown on the other side.
  8. Once fried, remove the tomatoes from the skillet and drain them on paper towels to remove excess oil.
