2 cups cooked elbow macaroni
1 cup sharp cheddar cheese, shredded
1 cup cream cheese, softened
1/2 cup shredded mozzarella cheese
1/4 cup sour cream
1/2 cup jalapeños, diced
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
1 cup breadcrumbs (preferably panko)
2 large eggs
Oil, for frying
Instructions
Cook the elbow macaroni until al dente. Drain and set aside.
In a large bowl, combine macaroni, cheddar cheese, cream cheese, mozzarella cheese, sour cream, and jalapeños. Stir well.
Add garlic powder, onion powder, salt, and pepper. Mix thoroughly.
Cover and refrigerate for 1 hour.
Scoop out tablespoon-sized portions and roll into balls.
Beat the eggs in one bowl and place breadcrumbs in another bowl.
Dip each ball in beaten eggs, then roll in breadcrumbs.
Heat oil in a skillet to 350°F (175°C).
Fry balls in batches until golden brown, about 2-3 minutes per side.
Remove from oil and drain on paper towels.
Serve warm.
