Crispy Parmesan Potatoes Recipe

Ingredients:

  • 2 lbs small red or yellow potatoes, quartered
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons Italian seasoning
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the potatoes with olive oil, Parmesan cheese, garlic, salt, pepper, and Italian seasoning. Toss until the potatoes are well coated.
  3. Arrange the potatoes in a single layer on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, or until they are golden brown and crispy, turning them once halfway through the cooking time.
  5. Garnish with freshly chopped parsley before serving.
