Crispy Parmesan Potatoes Recipe
Ingredients:
- 2 lbs small red or yellow potatoes, quartered
- 1/4 cup olive oil
- 1/2 cup grated Parmesan cheese
- 2 tablespoons minced garlic
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons Italian seasoning
- Fresh parsley, chopped (for garnish)
Directions:
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the potatoes with olive oil, Parmesan cheese, garlic, salt, pepper, and Italian seasoning. Toss until the potatoes are well coated.
- Arrange the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until they are golden brown and crispy, turning them once halfway through the cooking time.
- Garnish with freshly chopped parsley before serving.
