  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried rosemary (or your favorite herbs)
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the potatoes thoroughly. If using larger potatoes, cut them into equal-sized chunks or wedges for even cooking.
  3. In a large bowl, combine olive oil, garlic powder, onion powder, rosemary, salt, and pepper.
  4. Add the potatoes to the bowl and toss them until well coated in the seasoning mix.
  5. Arrange the seasoned potatoes in a single layer on a baking sheet. Ensure they have enough space to roast evenly.
  6. Place the baking sheet in the preheated oven and roast for 30-40 minutes, flipping the potatoes halfway through for even browning.
  7. The potatoes are done when they are golden brown and crispy on the outside and tender inside. You can test this by piercing them with a fork.
  8. Remove from the oven and garnish with fresh parsley if desired.
