- 2 pounds of baby potatoes (or regular potatoes, cut into chunks)
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried rosemary (or your favorite herbs)
- Salt, to taste
- Pepper, to taste
- Fresh parsley, for garnish (optional)
- Preheat your oven to 425°F (220°C).
- Wash and dry the potatoes thoroughly. If using larger potatoes, cut them into equal-sized chunks or wedges for even cooking.
- In a large bowl, combine olive oil, garlic powder, onion powder, rosemary, salt, and pepper.
- Add the potatoes to the bowl and toss them until well coated in the seasoning mix.
- Arrange the seasoned potatoes in a single layer on a baking sheet. Ensure they have enough space to roast evenly.
- Place the baking sheet in the preheated oven and roast for 30-40 minutes, flipping the potatoes halfway through for even browning.
- The potatoes are done when they are golden brown and crispy on the outside and tender inside. You can test this by piercing them with a fork.
- Remove from the oven and garnish with fresh parsley if desired.
- Transfer the potatoes to a serving dish and serve immediately while hot and crispy.
