Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Chop your chosen vegetables into bite-sized pieces, aiming for uniform sizes for even cooking.
  3. In a large mixing bowl, combine the gnocchi and chopped vegetables. Drizzle with olive oil, then sprinkle with garlic powder, salt, and pepper.
  4. Toss everything together until gnocchi and veggies are evenly coated with oil and seasonings.
  5. Transfer the mixture to a large baking sheet and spread it out in a single layer.
  6. Place the sheet pan in the preheated oven and bake for 20 minutes, stirring halfway through.
