Southern Fried Catfish

Ingredients:

  • Eight 5- to 6-ounce catfish fillets, skin removed
  • Salt
  • Crab boil seasoning (recommended: Old Bay)
  • 4 cups all-purpose flour
  • 1 cup cornmeal
  • Oil, for frying

Directions:

  1. In a shallow dish, combine cornmeal, flour, salt, and crab boil seasoning. Mix well.
  2. Heat oil in a deep fryer or cast iron skillet to about 350 degrees F.
  3. Dredge each fish fillet in the cornmeal mixture, shaking off the excess.
  4. Fry the catfish for 3-5 minutes per side (or until golden and crispy if deep frying) or until it’s cooked to your desired crispiness.
  5. Drain the fried catfish on paper towels to remove excess oil.
  6. Serve and enjoy!
