Southern Fried Catfish
Ingredients:
- Eight 5- to 6-ounce catfish fillets, skin removed
- Salt
- Crab boil seasoning (recommended: Old Bay)
- 4 cups all-purpose flour
- 1 cup cornmeal
- Oil, for frying
Directions:
- In a shallow dish, combine cornmeal, flour, salt, and crab boil seasoning. Mix well.
- Heat oil in a deep fryer or cast iron skillet to about 350 degrees F.
- Dredge each fish fillet in the cornmeal mixture, shaking off the excess.
- Fry the catfish for 3-5 minutes per side (or until golden and crispy if deep frying) or until itβs cooked to your desired crispiness.
- Drain the fried catfish on paper towels to remove excess oil.
- Serve and enjoy!
