Crispy Zucchini Fritters with Mozzarella and Dill

Ingredients

  • 2 zucchinis, grated
  • 100 grams breadcrumbs
  • 60 grams flour
  • 3 eggs
  • 100 grams mozzarella cheese, grated
  • 40 grams sour cream
  • 2 cloves garlic, minced
  • Fresh dill, chopped (to taste)
  • Salt and pepper (to taste)
  • Olive oil (for frying)

Instructions

  1. Prepare the Zucchini: Place the grated zucchini in a colander, sprinkle with a pinch of salt, and let it sit for about 10 minutes. This helps to draw out excess moisture. Afterward, squeeze the zucchini to remove any remaining water.
  2. Mix the Ingredients: In a large bowl, combine the grated zucchini, breadcrumbs, flour, eggs, grated mozzarella, sour cream, minced garlic, and chopped dill. Season with salt and pepper. Mix until well combined.
  3. Form the Fritters: Take a small handful of the mixture and shape it into a patty. Repeat with the remaining mixture.
  4. Cook the Fritters: Heat a generous amount of olive oil in a large skillet over medium-high heat. Once hot, add the fritters, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
  5. Serve: Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil. Serve immediately with a dollop of sour cream or your favorite dipping sauce.
