Ingredients
- 2 zucchinis, grated
- 100 grams breadcrumbs
- 60 grams flour
- 3 eggs
- 100 grams mozzarella cheese, grated
- 40 grams sour cream
- 2 cloves garlic, minced
- Fresh dill, chopped (to taste)
- Salt and pepper (to taste)
- Olive oil (for frying)
Instructions
- Prepare the Zucchini: Place the grated zucchini in a colander, sprinkle with a pinch of salt, and let it sit for about 10 minutes. This helps to draw out excess moisture. Afterward, squeeze the zucchini to remove any remaining water.
- Mix the Ingredients: In a large bowl, combine the grated zucchini, breadcrumbs, flour, eggs, grated mozzarella, sour cream, minced garlic, and chopped dill. Season with salt and pepper. Mix until well combined.
- Form the Fritters: Take a small handful of the mixture and shape it into a patty. Repeat with the remaining mixture.
- Cook the Fritters: Heat a generous amount of olive oil in a large skillet over medium-high heat. Once hot, add the fritters, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
- Serve: Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil. Serve immediately with a dollop of sour cream or your favorite dipping sauce.
