Ingredients:
- 6 eggs
- 180g granulated sugar
- 170g cake flour
- 40g cocoa powder
- 50g sugar
- 100g water
- 1 tsp Cointreau
- Dark Chocolate
- 60g milk
- 60g butter
Directions:
- Begin by preparing the dark chocolate frosting. In a heat-resistant bowl, combine milk and butter, warming them in a water bath at 50ΒΊC until melted. In a separate pot, bring 50g of sugar, water, and Cointreau to a boil on the stove to create the cake syrup. Allow it to cool once boiled.
- Sift together the cake flour and cocoa powder. Preheat the oven to 170ΒΊC. Next, create the cocoa genoise by placing eggs and granulated sugar in a heat-resistant bowl over the water bath at 40ΒΊC. Whisk vigorously with a wire whisk until the mixture lightens in color.
- Gradually incorporate the sifted cake flour and cocoa powder into the egg mixture, mixing thoroughly with a rubber spatula. Add the warmed butter and milk, combining until smooth. Divide the batter evenly into two parts and pour into round cake molds lined with oven paper. Bake in the preheated oven at 170ΒΊC for approximately 35 minutes.
- Once baked, remove the cakes from the oven and allow them to cool. Once cooled, carefully slice each cake into two equal parts. Brush the surface of each cake with the prepared cake syrup.
- Finally, assemble the cake by spreading a layer of DLA Dark Chocolate filling between each cake layer and coating the entire cake with the remaining frosting.
