Ingredients:

For the Cookie Cups:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup molasses
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Caramel Apple Filling:

  • 2 cups diced and peeled apples (such as Granny Smith)
  • 1 tablespoon lemon juice
  • 1/4 cup unsalted butter
  • 1/2 cup light brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Directions:

For the Cookie Cups:

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large bowl, cream together the softened butter and granulated sugar until fluffy.
  3. Add molasses and egg, beating well after each addition.
  4. In a separate bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop small portions of the dough into the prepared mini muffin tin, pressing down to form cups.
