Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  2. Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel, twist the towel to squeeze out excess moisture.
  3. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt until well combined.
  4. In a separate large bowl, beat together the granulated sugar, brown sugar, and eggs until the mixture is light and fluffy. Add the vegetable oil and vanilla extract, continuing to mix until everything is well incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
  6. Gently fold in the grated zucchini, chocolate chips, and nuts (if using) until evenly distributed in the batter.
